Skillet Beans and Rice with Kielbasa

Ingredients

(Ingredients modified to include Aldi brand name)

  • 1 tablespoon Carlini extra virgin olive oil
  • 1 tablespoon Countryside Creamery unsalted butter
  • 1 package (14 ounce) Parkview polska kielbasa, diced
  • 1 medium sweet onion, diced
  • 3 garlic cloves, minced
  • 1 cup Rice Bowl white rice
  • 2 cups Chef’s Cupboard chicken broth
  • 1 can (14 ounce) Dakota’s Pride pinto beans, rinsed and drained
  • 1/2 teaspoon dried Stonemill Essentials Italian seasoning
  • 1/4 teaspoon cracked Stonemill Essentials red pepper flakes
  • Stonemill Essentials salt and Stonemill Essentials pepper, to taste
  • 1/4 cup finely chopped fresh parsley –> Not sold in Aldi stores. May sub with dried parsley.

Instructions

  1. In a large nonstick skillet, heat the oil and butter over medium-high. Add the kielbasa and onion; sauté until onions become soft and translucent (about 3 minutes), stirring occasionally. Add in the garlic and stir for about 30 seconds.
  2. Stir in the rice, chicken broth, beans, Italian seasoning, cracked red pepper, and a dash of salt and pepper. Bring to a boil. Cover, reduce heat to low, and simmer for 20-22 minutes until rice is done.
  3. Remove from the heat and stir in the parsley. Serve immediately and enjoy!

Breakfast Torta

Ingredients

(Ingredients modified to include Aldi brand name)

Breakfast Torta

  • 4 tortas
  • 1 cup Casa Mamitas refritos (refried beans), warmed
  • 1/2 cup Benita cotija cheese (or cheddar), crumbled or grated
  • avocado (one avocado should be sufficient for four tortas), sliced like this
  • 12 slices Appleton Farms bacon, cooked
  • chipotle Burman’s mayonnaise (see below)
  • 4 Goldhen eggs, cooked to your liking

chipotle mayonnaise

  • 2 tbsps chipotle peppers in adobo sauce, puréed
  • 2 cloves garlic, minced and crushed into a paste
  • 1/2 cup mayo
  • salt to taste
  • fresh lime juice to taste

Instructions

  1. Make the chipotle mayonnaise: Stir the chipotle purée and garlic paste into the mayonnaise. Add salt and lime juice to taste. Makes about 1/2 cup.
  2. Slice the torta(s) in half. Toast the bread if desired. Spread a quarter cup of refritos on one half of the torta. Sprinkle cotija cheese over the refritos. Layer 3-4 slices of avocado over the cheese. Place a few slices of bacon on the avocado. Squeeze or spread the chipotle mayonnaise on the bacon. Top with a fried egg or scrambled egg sheet (just like scrambled eggs, except you let it cook in a sheet like a pancake). Place the other half of the torta on top and serve hot. Makes 4 tortas.

I used hamburger buns for the torta. I imagine you can substitute with an english muffin or bagel as well.

Turkey, Bean and Spinach Soup

Ingredients

(Ingredients modified to include Aldi brand name)

  • 2 tablespoons Carlini extra virgin olive oil
  • 1 pound Kirkwood ground turkey
  • 1 medium yellow onion, diced
  • 1 clove garlic, minced
  • pinch of Stonemill Essentials red pepper flakes
  • 1/4 teaspoon Stonemill Essentials black pepper
  • 1 teaspoon Stonemill Essentials dried oregano
  • 1/2 teaspoon Stonemill Essentials dried basil
  • 1 (14.5 ounce) can Happy Harvest Diced Tomatoes
  • 1 (15.8 ounce) can Dakota’s Pride great northern beans, drained and rinsed
  • 8 ounces Little Salad Bar baby spinach
  • 3 cups Chef’s Cupboard chicken broth
  • 1/2 cup Reggano Grated Parmesan Cheese, plus extra for garnish

Instructions

  1. Heat the oil in a large pot over medium-high heat. Brown the turkey with the onions, garlic, red pepper flakes,and pepper until the turkey is cooked through and then onions are translucent (about 7 minutes).
  2. Add the oregano, basil, HUNT’s tomatoes (with liquid), and beans. Stir to combine.
  3. Reduce heat to medium-low, add spinach and cover for about 2 minutes or until spinach is wilted. Stir to combine.
  4. Add broth, stir, and increase heat to medium. Continue to cook until heated through – about 5 minutes.
  5. Remove from heat, stir in KRAFT Grated Parmesan Cheese, and serve.
