Kung Pao Chickpeas

Ingredients

Marinade:

  • 2 Tbsp reduced-sodium soy sauce
  • 2 Tbsp rice wine vinegar
  • 1 lime, zested and juiced
  • 1 Tbsp agave or honey
  • 1 Tbsp coconut oil, melted (or vegetable oil)
  • 1 Tbsp cornstarch
  • 1 (14.5 ounce) can chickpeas, drained and rinsed well

Stir-Fry:

  • 2 Tbsp coconut oil (or vegetable)
  • 3 garlic cloves, minced
  • 1 (1 inch) section of fresh ginger, grated
  • ½ tsp crushed red pepper
  • ½ cup peanuts
  • 1 cup bottled kung pao sauce

Garnish:

  • Green onions, thinly sliced
  • Thai chili peppers, sliced
  • Peanuts
  • Cilantro
  • Red cabbage
  • Sesame seeds

Instructions

  1. Combine all the ingredients for the marinade in a bowl. Add the chickpeas to the marinade, and stir. Cover and marinate for at least 30 minutes.
  2. In a large skillet or wok over medium heat, add the coconut oil, the marinated chickpeas and the remaining stir fry ingredients.
  3. Sauté for about 6 to 10 minutes, until the chickpeas have caramelized to your liking.
  4. Serve over rice and garnish as desired.

Skillet Beans and Rice with Kielbasa

Ingredients

(Ingredients modified to include Aldi brand name)

  • 1 tablespoon Carlini extra virgin olive oil
  • 1 tablespoon Countryside Creamery unsalted butter
  • 1 package (14 ounce) Parkview polska kielbasa, diced
  • 1 medium sweet onion, diced
  • 3 garlic cloves, minced
  • 1 cup Rice Bowl white rice
  • 2 cups Chef’s Cupboard chicken broth
  • 1 can (14 ounce) Dakota’s Pride pinto beans, rinsed and drained
  • 1/2 teaspoon dried Stonemill Essentials Italian seasoning
  • 1/4 teaspoon cracked Stonemill Essentials red pepper flakes
  • Stonemill Essentials salt and Stonemill Essentials pepper, to taste
  • 1/4 cup finely chopped fresh parsley –> Not sold in Aldi stores. May sub with dried parsley.

Instructions

  1. In a large nonstick skillet, heat the oil and butter over medium-high. Add the kielbasa and onion; sauté until onions become soft and translucent (about 3 minutes), stirring occasionally. Add in the garlic and stir for about 30 seconds.
  2. Stir in the rice, chicken broth, beans, Italian seasoning, cracked red pepper, and a dash of salt and pepper. Bring to a boil. Cover, reduce heat to low, and simmer for 20-22 minutes until rice is done.
  3. Remove from the heat and stir in the parsley. Serve immediately and enjoy!

Turkey, Bean and Spinach Soup

Ingredients

(Ingredients modified to include Aldi brand name)

  • 2 tablespoons Carlini extra virgin olive oil
  • 1 pound Kirkwood ground turkey
  • 1 medium yellow onion, diced
  • 1 clove garlic, minced
  • pinch of Stonemill Essentials red pepper flakes
  • 1/4 teaspoon Stonemill Essentials black pepper
  • 1 teaspoon Stonemill Essentials dried oregano
  • 1/2 teaspoon Stonemill Essentials dried basil
  • 1 (14.5 ounce) can Happy Harvest Diced Tomatoes
  • 1 (15.8 ounce) can Dakota’s Pride great northern beans, drained and rinsed
  • 8 ounces Little Salad Bar baby spinach
  • 3 cups Chef’s Cupboard chicken broth
  • 1/2 cup Reggano Grated Parmesan Cheese, plus extra for garnish

Instructions

  1. Heat the oil in a large pot over medium-high heat. Brown the turkey with the onions, garlic, red pepper flakes,and pepper until the turkey is cooked through and then onions are translucent (about 7 minutes).
  2. Add the oregano, basil, HUNT’s tomatoes (with liquid), and beans. Stir to combine.
  3. Reduce heat to medium-low, add spinach and cover for about 2 minutes or until spinach is wilted. Stir to combine.
  4. Add broth, stir, and increase heat to medium. Continue to cook until heated through – about 5 minutes.
  5. Remove from heat, stir in KRAFT Grated Parmesan Cheese, and serve.
