Red Beans & Rice Casserole

Ingredients

(Ingredients modified to include Aldi brand name)

  • 1 tablespoon Carlini olive oil
  • 1 small onion, chopped (about 1½ cups)
  • 1 medium green pepper, chopped (about ½ cup)
  • 2 cloves garlic, minced
  • 12-ounces Parkview beef sausage, sliced
  • 1 16-ounce can Dakota’s Pride kidney beans
  • 1 10-ounce can Happy Harvest Diced Tomatoes and Chilies
  • 1½ cups Rice Bowl Instant White Rice
  • 1½ cups  Chef’s Cupboard chicken broth
  • 1 cup shredded Happy Farms cheddar cheese

Instructions

  1. Heat oven to 350 degrees F.
  2. Spray a 9 x 13-inch baking dish with cooking spray and set aside.
  3. Heat the olive oil in a large pan on medium-high heat.
  4. Add the onions and green peppers and cook, stirring occasionally until vegetables are tender, about 8 minutes.
  5. Add the garlic and cook, stirring for a minute more.
  6. Add in the sausage and red beans and stir.
  7. Mix in the can of undrained diced tomatoes and chilies, the rice and the chicken broth. Stir well.
  8. Transfer to the baking dish and top with shredded cheddar cheese.
  9. Cover baking dish with foil and bake for 30 minutes.
  10. Serve.

Huevos Ranchero

Ingredients

(Ingredients modified to include Aldi brand name)

Ranchero Sauce (basically, a cooked salsa)

  • 14.5 oz. can of Happy Harvest Tomatoes w/Green Chilies
  • 1 medium or large orange or red bell pepper (stem, ribs, seeds removed)
  • 1/2 an onion, roughly chopped
  • 2 garlic cloves, smashed
  • 1 TB peanut oil (alternate Aldi Carlini Canola Oil)
  • the juice of half a lime

Huevos Rancheros

  • 2 Mission yellow corn tortillas
  • 2 Goldhen eggs
  • peanut oil (alternate Aldi Carlini Canola Oil)
  • 1 c. ranchero sauce (see above)
  • 1 c. Dakota’s Pride black beans, heated
  • Bennita queso cotija, to taste
  • avocado, sliced

Instructions

Ranchero Sauce

  • Pulse tomatoes, bell pepper, onion and garlic in food processor until somewhat smooth.  Heat oil in a pot.  Slowly, carefully pour blended mixture into pot.  Stir in lime juice.  Keep stirring and cook until slightly thickened, about 10 minutes

Huevos

  • In a lightly oiled pan (I use two) heat tortillas a few seconds on one side.  Flip.  Crack one egg over each tortilla (it’s okay if it runs off the sides).  Cook just until the white around the yolk is set.  If you want your egg yolk less runny, cover the pan with a lid until the white on top of the yolk starts to turn opaque.
  • Plate each tortilla and egg on top of 1/2 c. of beans.  Pour 1/2 c. of salsa over each egg.  Crumble cotija and fan avocado slices on top.

Vegetarian Chili with Roasted Chilies

Ingredients

(Ingredients modified to include Aldi brand name)

  • 1 medium anaheim chili
  • 1 15 oz can of Dakota’s Pride red beans, drained and rinsed
  • 1 large carrot, small dice, about 1/2 cup
  • 2 stalks celery, cleaned & ends trimmed. Small dice, about 1/2 cup
  • 1 red bell pepper, small dice, about 1 cup
  • 1 small onion, minced, about 1 cup
  • 2 large cloves garlic, finely minced
  • 1 Tablespoon Carlini olive oil
  • 2 teaspoons of Fusia soy sauce
  • 1 teaspoon of Stonemill Essentials ground cumin
  • 1 teaspoon of Stonemill Essentials chili powder
  • 1/2 cup Happy Harvest crushed tomatoes
  • 1 cup of Chef’s Cupboard vegetable broth

Instructions

  1. Preheat oven to 325 degrees. Wash chili pepper, pat dry all outside moisture. Rub with bit of olive oil to coat the chili pepper. Put on sheet pan and roast in oven for about 15 minutes, turning frequently for even roast. Roast chili pepper till the skin starts to bubble and char. Then remove pepper from oven and place in plastic bag for about 15 minutes. The steam will release the skin from the meat of the pepper. Remove skin and seeds, discard. Dice the chili pepper, set aside.
  2. In heated medium saucepan, add olive oil till hot. Then add onions and garlic and cook till they are soft and fragrant. Then add carrots. Cook carrots for about 5 minutes or until slightly softened.
  3. Add celery, red bell peppers and green chili. Cook for about 5 minutes or until soft.
  4. Add beans, vegetable broth, crushed tomatoes, soy sauce, cumin and chili powder. Stir pot well and let simmer on low heat for about 10 minutes.
  5. For best flavor, the chili tastes better the next day, once the beans absorbs all the spices.
