Sour Cream and Onion Roasted Black Eyed Peas

Ingredients

For the Roasted Black Eyed Peas:
  • 3 cups (2 cans) low sodium black eyed peas, drained and rinsed
  • 1-2 tbsp olive oil
  • salt & pepper to taste
For the Sour Cream and Onion Powder:
  • 2 tbsp powdered buttermilk
  • 1 tbsp dried chives or 1 tsp onion powder
  • 1 tsp dried parsley
  • ½ tbsp garlic powder
  • ½ tsp sugar of choice

Instructions

  1. Preheat oven to 425 degrees (F) and line a baking sheet with parchment paper. Add all of the ingredients for the sour cream and onion powder to a spice grinder and grind into a fine powder, if you don’t have one, just toss them all together in a small bowl and stir very well. Set aside.
  2. Spread black eyed peas on paper towels and gently pat until they are very, very dry.
  3. Add the peas, olive oil, and salt and pepper to the baking sheet and toss to coat.
  4. Bake for 10 mins, remove from oven, toss again, then return to the oven to bake for another 10 minutes. Remove from the oven again, toss again, then bake for another 10 minutes.
  5. Check the black eyed peas for desired crispiness. If they aren’t crunchy enough, bake for another 5-8 minutes or until crispy.
  6. Remove from oven and immediately dust with several heavy sprinkles of the sour cream and onion powder. Toss to coat.

Skillet Beans and Rice with Kielbasa

Ingredients

(Ingredients modified to include Aldi brand name)

  • 1 tablespoon Carlini extra virgin olive oil
  • 1 tablespoon Countryside Creamery unsalted butter
  • 1 package (14 ounce) Parkview polska kielbasa, diced
  • 1 medium sweet onion, diced
  • 3 garlic cloves, minced
  • 1 cup Rice Bowl white rice
  • 2 cups Chef’s Cupboard chicken broth
  • 1 can (14 ounce) Dakota’s Pride pinto beans, rinsed and drained
  • 1/2 teaspoon dried Stonemill Essentials Italian seasoning
  • 1/4 teaspoon cracked Stonemill Essentials red pepper flakes
  • Stonemill Essentials salt and Stonemill Essentials pepper, to taste
  • 1/4 cup finely chopped fresh parsley –> Not sold in Aldi stores. May sub with dried parsley.

Instructions

  1. In a large nonstick skillet, heat the oil and butter over medium-high. Add the kielbasa and onion; sauté until onions become soft and translucent (about 3 minutes), stirring occasionally. Add in the garlic and stir for about 30 seconds.
  2. Stir in the rice, chicken broth, beans, Italian seasoning, cracked red pepper, and a dash of salt and pepper. Bring to a boil. Cover, reduce heat to low, and simmer for 20-22 minutes until rice is done.
  3. Remove from the heat and stir in the parsley. Serve immediately and enjoy!

Chorizo, Rice & Bean Soup

Ingredients

(Ingredients modified to include Aldi brand name)

  • 2 tablespoons Countryside Creamery butter
  • 1 yellow onion, diced
  • 2 garlic cloves, chopped
  • 1-pound ground Cacique chorizo (you can also use the chorizo sausage sold in casings – remove from casings when cooking)
  • Stonemill Essentials salt and Stonemill Essentials  ground pepper, to taste
  • 1 can (15-ounces) Happy Harvest diced tomatoes
  • 1 can (15-ounces) Dakota’s Pride beans, rinsed and drained (you can use pinto beans, great northern, kidney… whatever you have on hand)
  • 2 teaspoons Stonemill Essentials dried parsley
  • 2 cups Chef’s Cupboard beef stock
  • 2 cups water
  • ½ cup uncooked Rice Bowl white rice
  • chopped fresh parsley or cilantro (optional – used for garnish) –> Not sold in Aldi stores
  • lime wedges (optional – used for garnish)

Instructions

  1. Melt butter in a dutch oven or a soup pot.
  2. Add diced onion and cook for 1 minute.
  3. Stir in garlic; continue to cook for 30 seconds, stirring occasionally.
  4. Add chorizo; season with salt and pepper and cook over medium-high heat for 4 to 5 minutes, or until browned, stirring to break up and crumble the meat.
  5. Stir in diced tomatoes and beans.
  6. Season with dried parsley and continue to cook for 2 minutes.
  7. Add beef stock and water; bring to a boil, stirring occasionally.
  8. Stir in rice and reduce heat to a simmer.
  9. Cover and continue to cook for 12 to 15 minutes, or until rice is thoroughly cooked.
  10. Remove from heat.
  11. Ladle soup into bowls; add fresh lime juice from one small wedge, sprinkle with parsley or cilantro and serve.
