Rice & Bean Cakes

Bean & Rice Cakes

This recipe comes to us from Jan at Savvy Mom

Ingredient

  • 2 cups cooked rice
  • 1 cup frozen corn kernels
  • 1 cup pinto or black beans
  • ⅔ cup grated cheddar cheese
  • 2 green onions, trimmed and sliced
  • 2 eggs
  • ½ tsp chili powder
  • ½ tsp ground cumin
  • ½ tsp salt

Directions

  • Preheat the oven to 400˚F and liberally grease a standard muffin tin.
  • In a medium mixing bowl combine the rice, corn, beans, cheese and green onions. In a smaller bowl, whisk together the eggs, chili powder, cumin and salt.
  • Add the egg mixture to the rice and stir well. Divide evenly between muffin tin and bake for 12–15 minutes or until the rice is slightly golden.
  • Allow to cool for 5 minutes before removing from muffin tin.

Cuban Black Beans & Rice

Ingredients

  • 1 C black beans
  • 3 Tbsp water
  • 1 red capsicum – sliced
  • 1/2 C celery – chopped
  • 2 carrots – juillien
  • 1 small onion – chopped
  • 1/2 tsp asafoetida
  • 1 C basmati rice
  • 2 C vegetable stock
  • 2 tsp paprika powder
  • 1/2 tsp cumin
  • 1/2 tsp chili powder
  • Pepper for seasoning

Instructions

Wash the black beans
Pressure cook the black beans using this quick soak method
– Pour 4 cups of water into the pressure cooker and then add the black beans
– Close the lid and bring up to high pressure for 1 minute then remove from the heat and
quick release the pressure
– Now leave for 1 hour for the black beans to soak
– After one hour place the black beans on the cook top, close the pressure cooker lid
bring to high pressure and then keep the pressure for 18 minutes (Tip move the pressure cooker
after the pressure is high onto a cook top element on the lowest heat
-After the 18 minutes has elapsed switch off element and let the pressure cooker release the pressure
to atmosphere naturally
– Remove the beans into a bowl and set to the side

Place the 3 Tbsp of water into the pressure cooker, saute the onions and asafoetida for a couple of minutes
Add the red capsicum, celery, carrots and combine for 2 minutes
Add the rice, cumin, paprika and chili powder then combine
Add to the mixture the beans and then the vegetable stock and stir gently together
Place the lid on the pressure cooker and heat it until the low pressure indication shows then
move the pressure cooker to a low heat and maintain the low pressure for 18 minutes
Serve the dish with crusty rye bread

Vegetarian Chili with Roasted Chilies

Ingredients

(Ingredients modified to include Aldi brand name)

  • 1 medium anaheim chili
  • 1 15 oz can of Dakota’s Pride red beans, drained and rinsed
  • 1 large carrot, small dice, about 1/2 cup
  • 2 stalks celery, cleaned & ends trimmed. Small dice, about 1/2 cup
  • 1 red bell pepper, small dice, about 1 cup
  • 1 small onion, minced, about 1 cup
  • 2 large cloves garlic, finely minced
  • 1 Tablespoon Carlini olive oil
  • 2 teaspoons of Fusia soy sauce
  • 1 teaspoon of Stonemill Essentials ground cumin
  • 1 teaspoon of Stonemill Essentials chili powder
  • 1/2 cup Happy Harvest crushed tomatoes
  • 1 cup of Chef’s Cupboard vegetable broth

Instructions

  1. Preheat oven to 325 degrees. Wash chili pepper, pat dry all outside moisture. Rub with bit of olive oil to coat the chili pepper. Put on sheet pan and roast in oven for about 15 minutes, turning frequently for even roast. Roast chili pepper till the skin starts to bubble and char. Then remove pepper from oven and place in plastic bag for about 15 minutes. The steam will release the skin from the meat of the pepper. Remove skin and seeds, discard. Dice the chili pepper, set aside.
  2. In heated medium saucepan, add olive oil till hot. Then add onions and garlic and cook till they are soft and fragrant. Then add carrots. Cook carrots for about 5 minutes or until slightly softened.
  3. Add celery, red bell peppers and green chili. Cook for about 5 minutes or until soft.
  4. Add beans, vegetable broth, crushed tomatoes, soy sauce, cumin and chili powder. Stir pot well and let simmer on low heat for about 10 minutes.
  5. For best flavor, the chili tastes better the next day, once the beans absorbs all the spices.
