Cuban Rice and Black Bean Salad with Jalapeño Mustard

Ingredient

  • 1 Tbsp. FRENCH’S® Classic Yellow® Mustard
  • 3 Tbsp. Olive oil
  • 3 Tbsp. apple cider vinegar
  • 3 Tbsp. mayonnaise
  • 2 Tbsp. chopped jalapeños
  • 1 Tbsp. chopped cilantro
  • 1/2 tsp. ground cumin
  • 1 tsp. FRANK’S RedHot® Original Cayenne Pepper Sauce
  • 2 cups cooked white rice
  • 1 (15 ounce) can black beans,drained and rinsed
  • 1 cup julienne bell peppers and whole kernel corn

Directions

  • WHISK together mustard, vinegar, mayonnaise, jalapeños, cilantro, cumin and Frank’s RedHot Sauce in large bowl.
  • STIR in rice, black beans, bell peppers and corn; toss to blend. Cover and refrigerate until chilled. Garnish as desired.

Black Bean and Rice Bowls with Creamy Avocado Sauce

Ingredients

  • 4 cups of cooked rice (I used spanish rice, but any rice or quinoa works well)
  • 2 cups black beans
  • 1 cup chopped tomato
  • ½ cup chopped green onion
  • 2 cups corn kernels
  • 1 cup chopped fresh cilantro
  • 1 cup pepitas (pumpkin seeds)

For the dressing:

  • 1 avocado
  • 2 cloves of garlic
  • 2 tbsp apple cider vinegar
  • ½ cup olive oil
  • ¼ cup pepitas (pumpkin seeds)
  • 1 tsp cumin
  • ¼ cup lime juice
  • ¼ cup chopped fresh cilantro
  • ½ cup water
  • 1 tsp salt

Instructions

  1. For the dressing: combine all ingredients into a food processor or blender, and pulse until nice and smooth.
  2. Create individual bowls, by beginning with 1 cup rice and then topping with ½ cup beans.
  3. Garnish with any other toppings.
  4. Complete your bowl by drizzling your creamy avocado sauce on top.
