Lima Beans with Ham


Servings: 6


  • 1 (1 pound) bag of large dried lima beans, soaked overnight in water, rinsed and drained
  • 1 large ham hock with some meat still on the bone or 1 cup chopped ham of your choice
  • 1 medium onion, chopped
  • 1/2 teaspoon minced garlic
  • 1/2 teaspoon pepper
  • 1 teaspoon salt
  • 2 – 4  cups rice, cooked according to package directions depending on how many people you are serving


  • Place the drained beans in a stock pot and pour six cups of fresh water over the beans.
  • Stir in chopped onion, minced garlic and ham hock.
  • Keeping the lid tilted on stock pot, simmer the beans for 3 hours until soft and tender.
  • Add the salt and pepper and adjust seasonings.
  • Remove the ham hock from the pot and place on a chopping board.
  • Cut the ham hock into tiny pieces and transfer them back into the stock pot.
  • Serve the mixture warm over rice.
