Cheesy Black Beans & Rice

  • 1 cup white rice
  • ½ cup tomatillo salsa (or salsa verde)
  • 1¾ cup water
  • Pinch of Salt
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 cup colby jack or pepper jack cheese


  1. Place the rice, salsa, water and salt into a rice cooker or saucepan. Cook according to directions.
  2. Heat the oven to 450 degrees.
  3. Place the rice in a casserole dish, top with beans then cheese and cook until melted (about 5 minutes).
  4. Serve immediately.
