Tomatillo Rice & Beans

  • 1 cup white rice, uncooked
  • 1 tablespoon Olive Oil
  • 1/2 onion, chopped
  • 1 clove roasted garlic, minced
  • 3 medium tomatillos, washed and chopped
  • 2 cups black beans, cooked, rinsed and drained
  • * Salt and pepper, to taste


  • Cook rice according to manufacturer’s directions. Fluff with fork and set aside.
  • In a medium sized saucepan on medium heat warm olive oil. Add onion and sauté, moving occasionally, until caramelized.
  • Once caramelized, add garlic and tomatillos. Cook for 5 minutes, add 1/8 cup of water, then continue cooking until tomatillos break down and a thick sauce forms. Add salt and pepper to taste.
  • Fold tomatillo mixture into rice. Once evenly distributed, add black beans and fold again. Serve hot.
