One Pot Rice and Bean Soup

One Pot Rice and Bean Soup

  • 1 tbsp olive oil
  • 1 bunch of kale, chopped
  • 1 red pepper, chopped
  • 1 tbsp onion powder
  • 1 tbsp garlic powder
  • 1 tsp dried thyme
  • 1 tsp dried ginger
  • ¼ tsp salt
  • ¼ tsp pepper
  • 3 tbsp Better Than Bouillon
  • 2 cans black beans
  • 2 quarts water
  • 2 cups instant rice
  1. Heat olive oil in a large soup pot
  2. Add red pepper, kale, and spices
  3. Cook until red pepper is tender and kale is wilted
  4. Add Better Than Bouillon and beans
  5. Once Bouillon is integrated add water and bring to a boil
  6. Add instant rice and let boil for ten minutes
  7. Reduce heat and simmer for another ten minutes
  8. Set aside and let cool slightly before serving
  9. Optional: add shredded mozzarella to each serving
